This is my mother’s cake. She has been making it for as long as I can remember. It is very simple: sugar, flour, butter and berries. My kids love it. For me it is a slice of comfort and tastes like home. She always sprinkles it with cinnamon. Sometimes she adds peaches. I’ve shared the recipe below directly as written by my mom.
Mom’s Blueberry Cake
Ingredients
1/2 cup sugar
1/2 cup butter=1 stick (at room temperature)
1 cup flour
1 tbsp baking powder
1 tsp salt
2 eggs
2 cups fruit, I like my berries frozen…
CINNAMON
Instructions
- Preheat oven 350, buttered Pyrex, greased pan
- Cream sugar, butter, eggs
- Add flour, baking powder, salt.
- Add berries
- Put in Pyrex
- Sprinkle cinnamon
- Bake 1 hour
