There are no shortage of CC cookie recipes on the internet and lately i’ve been guilty of baking up Ballerina Farms frozen dough (they are seriously the best). I’m always experimenting in the kitchen to create healthier versions of my favorite treats. These grain free cookies are pretty perfect. They are soft and chewy with a rich buttery flavor and loaded with ooey gooey chunks of chocolate- yet they’re completely gluten-free and refined sugar-free, packed with protein and spiked with some beauty magic from pearl powder.
Tips and Tricks
• if you don’t do dairy replace the butter with coconut oil
• skip the pearl if you don’t have it on hand
• Ballerina Farm cookies are an add on to their meat boxes. They sell out quickly.
• These taste even better the next day!
Chocolate Chunk Cookies with Collagen and Pearl

Ingredients
1 cup almond flour
1 cup cassava flour
4 tablespoons collagen
1 teaspoon pearl powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup melted butter, ghee or coconut oil
1/3 cup maple syrup
1 teaspoon vanilla extract
1 egg
1 cup chocolate chips or chopped chocolate- I like HU hunks
Instructions
- Preheat the oven the 350. Line and baking sheet with parchment.
- In a food processor add the almond and cassava flour, collagen, pearl, salt and baking soda. Pulse to combine.
- Add the butter or coconut oil, maple syrup, vanilla and egg. Process until mixed- fold in the chocolate.
- Scoop the cookie dough onto the baking sheet.
- Bake for 20-22 minutes. Allow to cool.
