This smoothie is inspired by my cherry apricot cobbler—I was so obsessed with the combo of stone fruits that I turned the late spring flavors into a shake. After weeks of berry stained fingers I have finally invested in a cherry pitter! With all of the varieties of cherries available at the farmers market I have been freezing my own. But as we near the end of season you can always purchase frozen. NorthWest Wild Foods carry my favorite frozen cherries. They have both sweet and tart varieties.

This smoothie is inspired by my cherry apricot cobbler—I was so obsessed with the combo of stone fruits that I turned the late spring flavors into a shake. After weeks of berry stained fingers I have finally invested in a cherry pitter! With all of the varieties of cherries available at the farmers market I have been freezing my own. But as we near the end of season you can always purchase frozen. NorthWest Wild Foods carry my favorite frozen cherries. They have both sweet and tart varieties.


Ingredients

6 oz cashew or almond milk
1/2 cup frozen cherries
12 frozen apricots
1.5 cups frozen cauliflower or a mix of cauliflower and summer squash
1 tablespoon cashew pecan, almond or cashew butter
1 serving vanilla protein


Instructions

Combine all ingredients in a high speed blender and blend until smooth.*

*How to make your smoothie THICK!

A Tamper tool is a must! I add all my ingredients in a high speed blender with 6 oz of liquid. You can always add more liquid. Start blending on a low speed gradually increasing while pushing the ingredients down with a tamper. Once everything is broken down, increase the speed to high. If there is a frozen setting on your vitamix use it for 2 full cycles. If you do not have the frozen setting then continue bending and tampering. This should take about 1-2 minutes.
