This salad is inspired by a salad at one of my favorite restaurants Bettina. My family goes regularly for their sourdough pizzas with seasonal toppings. But the baby gems with homemade ranch is not to be missed. They top theirs with cucumbers, radishes and shredded goat cheddar which I highly recommend. I like to add slices of creamy avocado and chicken to make it more of a meal.
Baby Gems with Pickled Onions, Carrots, Avocado and Dilly Ranch

But the baby gems with homemade ranch is not to be missed. They top theirs with cucumbers, radishes and shredded goat cheddar which I highly recommend. I like to add slices of creamy avocado and chicken to make it more of a meal.
Ingredients
Baby Gems with Pickled Onions, Carrots and Avocado
Baby Gems, chopped
Carrots, sliced thin (I like using aa mandolin)
Pickled Red Onions
Avocado
optional: chicken, market veggies- cucumber, radish, corn, tomatoes
Dilly Ranch
This creamy dressing is fresh and bright loaded with herbs and thickened with greek yogurt. I love serving it over salads, as a dip for raw veggies.
1–2 cloves of garlic
zest and juice of 1 lemon
1/2 cup of chives
1/2 cup fresh dill
1/2 cup of mayo
1/2 cup of greek yogurt
1 teaspoon of garlic powder
1 teaspoon onion powder
1/2 teaspoon of sea salt
1/2 teaspoon of pepper
1 tsp. of Dijon mustard
Instructions
Baby Gems with Pickled Onions, Carrots and Avocado
Add the baby gems to a large bowl. Add carrots, pickled onions and avocado. Top with with dressing and toss to combine.
Dilly Ranch
Combine all ingredients into a high speed blender and blend until creamy.
